Hi all my wonderful readers. How are you all doing today?
We’re now in March, and that means it’s now technically Spring.
Spring is a time where we can put away those stodgy warming meals of winter, and opt for more fresher lighter meals.
I know it can be a bit tricky to come up with new and interesting meals. That’s why i’ve come up with a few ideas for you.
The first one is more of a snack than a meal. It’s my Garlic Bites.
You will need.
2 slices of bread per person.
3tbsp of butter, preferably real butter like Lurpak, but if you’re being healthy Flora Buttery will work just as well.
4-6 cloves of garlic, you could add more if you like it strong.
Here’s what you do.
1. In a bowl, melt your butter at 30 second intervals until you get a paste like consistency.
2. Crush your garlic and add it to your butter paste.
3. Mix the paste and garlic until well combined.
4. Cut your bread into soldier sized slices and spread the paste onto your bread.
5. Toast your bread under the grill until golden brown.
There you go, that’s my Garlic Bites. These are great as a little snack, or just on the side of your plate.
Next up is my to die for, Ham Salad.
I like a nice salad, but they can become a little boring.
Here’s what you’ll need.
3- 4 slices of Ham. Deli ham is best, not the wafer thin stuff. The higher the quality the ham, the better the salad.
Lettuce. Iceberg is good, but try to be a little more adventurous.
Tomatoes.
1 can of Sweetcorn.
Cucumber.
Peppers.
Red Onions.
4tbsp Olive Oil.
2tbsp Balsamic Vinegar.
1tsp Mustard.
1 handful of Pomegranate Seeds.
Here’s what you do.
1. Chop your Ham into strips. Make sure they’re not too thin, but not too thick, and add them to a large mixing bowl.
2. Shred your lettuce and add to the mixing bowl.
3. Drain the water from your can of sweetcorn, and add the sweetcorn to the bowl.
4. Chop your tomatoes into eighths and lightly sprinkle with salt. Make sure not to add too much as there’s already salt in the ham.
5. Slice your cucumber into thin slices, and add to the bowl.
6. Slice your peppers into very small thin slices, and add to the bowl.
7. Slice your onion, and add that to the mixing bowl.
8. To another smaller bowl, add the olive oil, balsamic, and mustard, and whisk very well.
9. To the smaller bowl, sprinkle in the pomegranate seeds and mix together.
10. Drizzle the contents of the smaller bowl over your salad.
11. Toss your salad well, and serve.
There you go, a nice healthy yet interesting Ham salad, perfect for those warmer days ahead, or maybe as a nice packed lunch.
The last and final dish I have for you is my Tuna and Sweetcorn Pasta.
I love Tuna, but it can become very boring, so i’ve tried to jazz it up a little.
Here’s what you’ll need.
Pasta, it’s up to you how much.
1 can of Tuna.
1 can of Sweetcorn.
6-8tbsp Mayonnaise.
6-8tbsp Cream.
3 Chives.
Here’s what you do.
1. Cook your pasta and add it to a large bowl.
2. Drain the water from both your tuna, and the sweetcorn, and add it to your bowl.
3. Mix in your mayonnaise, cream and chives.
4. Mix well, and serve.
There you have it, a nice quick simple pasta dish that will fill you up, but won’t leave you bloated.
There you go, three quick and simple spring meal ideas, that are perfect for the upcoming warmer weather.
